Characteristics of the sensorimotor coordination in the swallowing process

The swallowing requires coordinated interaction of many muscles, with different innervation, to form and carry a bite passing from mouth to stomach. There are tree swallowing phases: oral, pharyngeal and esophageal. The mechanism that protects the airways from the food aspiration is occlusion of the larynx during the pharyngeal phase. The crico-pharyngeal muscle plays crucial role in the functional of upper esophageal sphincter. The swallowing process is influenced by many brain centers including the cerebral cortex.
