abstract=" In the human taste system we can differentiate the peripheral (receptors and first order neurons) and central part (starting from the solitary nucleus). Taste-receptor cells can regenerate from epithelial cells. The  solitary nucleus (second order neurons) has connections not only with the thalamus nuclei but also with the autonomic and limbic systems. Perception of sour and salty tastes is mediated by ionotropic receptors and sweet, bitter and umami by metabotropic receptors. Links between the taste system and digestive system are presented. ",
